  1. Heat 1 tablespoon of oil in a non-stick pan, add ½ tablespoon ghee, mustard seeds, urad dal and cashew nuts. Stir and sauté for a minute until the mustard crackles.
  2. Add 1 sliced onion, 1 dry red chilli, 1 sprig of curry leaves and chopped garlic. Sauté until onion turns translucent.
  3. Add salt as required and sauté for a minute.
  4. Add chilli powder, garam masala and cumin powder. Sauté for 2 minutes.
  5. Add chopped carrot and combine with the masala. Add ¼ cup water and mix gently.
  6. Cover the pan and cook for 4-5 minutes on a low flame.
  7. Add chopped capsicum and give it a mix. Cover and cook for 3-4 minutes.
  8. Lastly add 4 cups of cooked rice, pepper powder and freshly chopped coriander leaves. Combine well.
  9. Serve hot and delicious carrot rice with raita or salad.
