  1. Rinse yellow moong dal and tur dal thoroughly in clean water and add it to the pressure cooker.
  2. Add shallots, chopped drum stick, chopped sweet pumpkin, turmeric powder and 3 cups of water. Mix well.
  3. Cover and pressure cook for 1 whistle on medium flame.
  4. Cook for 5 minutes on low flame.
  5. Remove from the heat and set aside. Let the pressure release naturally.
  6. Blend dry red chilli along with Kashmiri red chilli, coriander seeds, cumin seeds, pepper corns and fenugreek seeds in a blender.
  7. Blend to a fine powder. Sambar powder is ready. Set aside.
  8. Heat 1 teaspoon of ghee and 2 tablespoons of oil in a pan.
  9. Add mustard seeds, let the seeds splutter.
  10. Add round red chilli, asafoetida, roughly chopped onion and a sprig of curry leaves.
  11. Sauté for a few seconds until the onion turns translucent.
  12. Add ground sambar powder and rock salt to taste. Sauté for 2 minutes on low flame.
  13. Add tamarind pulp and jaggery. Combine well with masala and bring it to boil.
  14. Pour it into the cooker. Stir and combine well.
  15. Add ½ cup of water. Mix well.
  16. Cover with a lid and cook for 5 minutes on medium flame. Turn off the heat.
  17. Garnish with coriander leaves.
  18. Serve hot.
