  1. Rinse and soak tur dal and green moong dal in water for about an hour.
  2. Heat 1 teaspoon oil in a pressure cooker, add onion, 2 crushed garlic cloves, ginger and green chillies. Sauté until the onion turns translucent.
  3. Add tomato, cumin powder, chilli powder, turmeric powder and black salt. Sauté until the tomato turns soft and mushy.
  4. Add soaked dal, 3 cups of water and give it a mix. Close the lid and pressure cook for 3 whistles.
  5. Simmer and cook for 8 minutes on low flame. Turn off the heat.
  6. Once all the pressure is released from the cooker, open the lid, check and make sure the lentils are cooked well.
  7. Add freshly chopped coriander leaves and combine gently with the dal.
  8. Place a small bowl over cooked dal with a small piece of hot burning charcoal.
  9. Pour 1 teaspoon ghee over the hot charcoal. Cover the cooker with the lid and rest for a minute. Let the smoky flavour blend with the curry.
  10. Hot Charcoal is used to give a smoky flavour to this recipe.
  11. For seasoning, heat 1 tablespoon of ghee in a small wok, add 1 teaspoon cumin seeds, 2 pods of split garlic and dry red chilli. Sauté for a minute.
  12. Pour the seasoning over smoked dhaba dal and mix gently.
  13. Transfer it to a serving bowl and serve hot smoked dhaba dal with steamed rice, roti or parathas.
