  1. Rinse thoroughly and soak jeera rice for 30 minutes in a bowl of water.
  2. Blend ginger along with garlic cloves and green chilli in a blender. Blend smooth. Set aside.
  3. Blend coriander leaves and mint leaves in a blender. Blend smooth. Set aside.
  4. Heat 1 tablespoon of oil and 1 tablespoon of ghee in a flat & deep bottom skillet.
  5. Add a bay leaf, cinnamon, cloves, green cardamom, stone flower, cumin seeds, pepper corns and star anise. Sauté until the whole spices turn fragrant.
  6. Add sliced onion. Sauté till the onion turns translucent.
  7. Add ground ginger, garlic and green chilli paste. Sauté for 2 minutes on medium flame until the raw smell evades.
  8. Add sliced tomato. Sauté for 1 minute until the tomato turns soft and mushy.
  9. Add chopped carrot, beans, potato and green peas.
  10. Cook for 2-3 minutes on medium flame until the veggies become soft.
  11. Add mint and coriander leaves paste. Sauté for 2 minutes.
  12. Add coriander powder, garam masala and turmeric powder. Sauté for 2-3 minutes on medium to low flame until the oil separates from the masala.
  13. Add 1 ¾ cups of water. Mix well and bring it to a boil.
  14. Add salt as required and soaked jeera rice. Give it a mix.
  15. Cover with a lid and cook until the rice is done.
  16. Remove from the heat & fluff the rice with a fork.
  17. Serve hot and flavourful Veg Donne Biryani with raita and cucumber slices.
